Loaded Beef Burger

400g minced beef, 150g lentils, pinch black pepper, pinch salt, 4piece cornichons, 2piece pickled onions, 1piece jarred peppers, 100g cheddar cheese, 2piece burger buns
Instructions
1. Pulse canned lentils and minced beef together in a food processor with black pepper and salt.
2. Divide the mixture into four and shape into flattened patties.
3. Finely slice cornichons, pickled onions, and jarred peppers, and grate cheddar cheese.
4. Stuff the burger patties by layering cornichons, pickled onions, peppers, and grated cheese inside, then folding the meat over and pinching shut.
5. Cook the stuffed patties in a pan on medium-high heat for about 1 minute on each side.
6. Paint the burger with Dijon mustard and cook for another minute on each side.
7. Cut burger buns in half, place them in the pan to mop up juices, toast, and then assemble the stuffed burgers.
