1.5lb Chicken Wings, 3Tbsp Soy Sauce, 1.5Tbsp Sugar, 5cloves Garlic, 2roots Cilantro roots, 0.5tsp Salt, 0.25tsp White peppercorns, 0.25tsp Black peppercorns, 0.5cup Shallots, 0.25cup Rice flour, as needed Oil for frying, 0.25cup Water
Instructions
1. Thinly slice shallots, place on a paper towel, sprinkle with salt, and let sit to draw out moisture.
2. In a mortar and pestle, pound garlic, white peppercorns, black peppercorns, and cilantro roots into a fine paste.
3. Transfer the paste to a zip-top bag and add soy sauce, sugar, salt, and water. Add chicken wings, mix well, and marinate for 2 to 3 hours.
4. Pat the sliced shallots dry with a paper towel and deep fry them in low heat oil until golden brown and crispy. Stir frequently.
5. Remove marinated chicken wings from the bag, mix in rice flour to create a light batter coating.
6. Deep fry the chicken wings in batches at 350 degrees F for about 5 to 6 minutes until cooked through and golden brown.
