Spinach Puffs

bunch spinach, 3tablespoons dill, 1unit shallot, tablespoons olive oil, 3cloves garlic, pinch salt, pinch pepper, 4ounces cream cheese, 0.5cup feta cheese, 2ounces parmesan cheese, 2units egg, 2slices bacon, 1sheet puff pastry
Instructions
1. Remove stems from freshly rinsed spinach and roughly chop it into small bite-sized pieces.
2. Finely chop fresh dill and mince one shallot.
3. Sautée shallot in preheated olive oil until soft and translucent, about 2 minutes.
4. Add crushed garlic and cook for another 30 seconds or until fragrant.
5. Add spinach and a little salt, cook until spinach shrinks and gives up its water.
6. Add dill, cook minimally to retain earthy herbiness, season with salt and pepper, then take off the flame to cool.
7. In a bowl, combine cream cheese, feta cheese, and grated parmesan cheese.
8. Add the warm spinach mixture, one egg yolk, and cooked, finely chopped bacon, mixing everything well.
9. Roll out puff pastry sheet and cut into 3 to 4-inch squares.
10. Place about 2 tablespoons of filling in the center of each square, brush edges with beaten egg, and crimp them together to form cornucopias.
11. Place on a baking sheet and chill in the refrigerator uncovered for 10 minutes.
12. Brush the pastries all over with beaten egg and bake in a preheated oven at 400°F (200°C) for 20 minutes until golden brown and puffed.
