0.5lb rice stick noodles, 4oz Char Siu, 3oz chicken, 0.5tsp cornstarch, 1tbsp water, 0.5pc onion, 1pc red bell pepper, 2pc scallions, 2stalks celery, 12pieces shrimp, 2pc eggs, 1tsp salt, 1tsp curry powder, 1tsp sugar, 1tbsp oyster sauce, 1tbsp sesame oil
Instructions
1. Soak the rice noodles in hot water for 1-2 minutes, then drain and cover with a plate to let steam. Do not rinse with cold water.
2. Slice the chicken into strips and marinate with cornstarch and water.
3. Cut onion, bell pepper, scallions, celery, and Char Siu into strips.
4. Mix curry powder, salt, sugar, oyster sauce, and water together to form the sauce.
5. Heat the wok, fry the eggs until soft, break into pieces, and set aside.
6. Stir-fry the chicken and shrimp until cooked, then set aside.
7. Stir-fry the vegetables and set aside.
8. Add oil to the wok, fry the noodles until fragrant and slightly crackling, then mix in the sauce.
9. Progressively add the vegetables, chicken, shrimp, Char Siu, bean sprouts, and eggs back into the noodles, mixing well.
10. Drizzle with sesame oil, mix for another 30-45 seconds, and serve.
