Air Fryer Onion Rings

1ea large sweet onion, 0.5cup flour, 1tsp paprika, 1tsp salt, 2ea eggs, 0.66cup buttermilk, 2cup panko breadcrumbs, 2tbsp olive oil
Instructions
1. Grab a large sweet onion, remove the skin, and cut it into half-inch thick slices. Separate the layers into rings.
2. In the first bowl, combine flour, paprika, salt, and give it a mix.
3. In the second bowl, add large eggs and whisk, then add buttermilk and mix until combined.
4. In the third bowl, add panko breadcrumbs and olive oil, working it together with your hands.
5. Set up the dredging station: dip the onion ring into flour, then buttermilk, back into flour, back into buttermilk, and finally into the panko mixture, pressing it down.
6. Spray the air fryer basket with oil, transfer the onion rings in carefully, and optionally spritz the top with oil. Set air fryer to 350 degrees.
7. Carefully flip the onion rings over at halfway through and optionally add one extra spray of oil.
