Ganbian Doujiao (Dry-Fried Green Beans)

30g dry shrimps, 453g green beans, 100g ground pork, 1tbsp minced garlic, 1tbsp minced ginger, 10g dry hot chilis, 2.5tbsp oil, 1tbsp soy sauce, 1tsp sugar, 1tsp salt
Instructions
1. Soak 30 grams of dry shrimps for 30 minutes, drain, and roughly mince them.
2. Take off the tips of the green beans, pull off the tough fiber as much as you can, and break them into short pieces.
3. Heat up the wok with 1.5 tablespoons of oil, add the green beans, and stir-fry for 5 to 8 minutes on medium-low heat until the surface gets brown-burned marks (hu pi).
4. Add a little bit of salt now to season the green beans properly, then take them out and set aside.
5. Add 1 tablespoon more oil into the same wok, put in minced garlic, ginger, and dry hot chilis. Stir-fry until fragrant.
6. Add the minced shrimp and ground pork. Stir-fry for about 2 minutes until cooked.
7. Add the green beans back to the wok. Season with 1 tablespoon of soy sauce, 1 teaspoon of sugar, and half a teaspoon of salt. Mix everything together well until ready to plate.
