Pork and Onion Stir Fry

1lb skinless pork belly, 1pieces sweet onion, 3cloves garlic, 0.5inch ginger, 1pieces green chili, 1pieces red chili, 2pieces dry red chilies, 1.5tsp oil, 1Tbsp soy sauce, 0.5Tbsp oyster sauce, 0.5Tbsp Sichuan Dou Ban Jiang, 1tsp dark soy sauce, 1Tbsp Chinese cooking wine, 0.5tsp Jiaoyan seasoning
Instructions
1. Slice the skinless pork belly into 1/8 of an inch thick pieces and set aside.
2. Slice the sweet onion in half, cut into bite-sized pieces, and separate the pieces by hand.
3. Slice the garlic and ginger thinly. Cut the green chili, red chili, and dry red chilies into bite-sized pieces.
4. Heat the wok to smoking hot, add oil to lubricate the surface, then add the pork belly pieces.
5. Stir-fry until the pork is golden brown and a lot of oil renders out. Remove excess oil if desired.
6. Add soy sauce, oyster sauce, Sichuan Dou Ban Jiang, dark soy sauce, and Chinese cooking wine.
7. Add the garlic slices, ginger slices, and dried red chilies. Stir-fry over medium heat for a minute or two until the pork has a desired brown color.
8. Toss in the onion and chili pepper. Switch the heat to high and stir until the vegetables reach your desired doneness.
9. Sprinkle with Jiaoyan seasoning or to taste, toss well, and serve.
