Lemon Chicken

3whole lemon, 397g chicken breast, 1dash sesame seed, 370g corn oil, 1.5tsp salt, 5tbsp sugar, 0.25tsp white pepper, 7tbsp cornstarch, 1tbsp oyster sauce, 7.5tbsp water, 1.5whole egg, 3tbsp all-purpose flour, 1tsp baking powder
Instructions
1. Prepare lemon garnish by cutting one lemon into 8 wedges.
2. Cut chicken breast into strips and halve horizontally to keep uniform size.
3. Marinate the chicken with salt, sugar, white pepper, cornstarch, oyster sauce, water, and part of a beaten egg. Massage the meat.
4. Make the lemon sauce by combining hand-squeezed lemon juice, sugar, water, and salt.
5. Create the frying batter by mixing all-purpose flour, cornstarch, salt, baking powder, water, egg, and a little oil to get a pancake-batter consistency.
6. First fry: Heat oil to 325°F. Coat chicken in batter and fry in batches until golden, about 2.5-3 minutes, then remove.
7. Second fry: Heat oil up to 400°F and fry chicken again in batches for 20-30 seconds until darker golden yellow and crispy.
8. Make the cornstarch slurry and cook the lemon sauce in the wok until boiling, then stir in the slurry until thickened.
9. Toss the fried chicken in the sauce, plate over lemon wedges, and sprinkle with sesame seeds.
