Sabudana Khichdi

1cup Sabudana, 1.75cup Water, 0.5cup Peanut, 1tsp Sugar, 0.75tsp Salt, 2tbsp Ghee, 1tsp Cumin, few Curry leaves, 1inch Ginger, 2pieces Chilli, 1pieces Potato, 0.5pieces Lemon, 2tbsp Coriander
Instructions
1. Rinse sabudana with water, rub with hand to remove excess starch, and drain water.
2. Add 3/4th cup water to soaked sabudana, dip completely, cover and soak for 6 hours.
3. Roast peanuts on low flame until crunchy, cool completely, and grind to coarse powder.
4. Add coarse peanut powder, sugar, and salt to soaked sabudana, and mix gently.
5. Heat ghee in a pan, splutter cumin, curry leaves, ginger, chilli, and boiled cubed potato. Fry on medium flame until slightly golden brown.
6. Add sabudana peanut mixture to the pan, mix gently, scrape from bottom, and cook until it turns translucent.
7. Add lemon juice and chopped coriander, mix gently, and serve.
