Pecan Sour Cream Coffee Cake

1.5cups chopped pecans, 0.5cup light brown sugar, 1.5cups white sugar, 1tbsp cinnamon, 1pinch salt, 1.5cups butter, 3cups all-purpose flour, 1tsp baking powder, 1tsp baking soda, 2whole eggs, 1tsp vanilla extract, 1cup sour cream
Instructions
1. In a bowl, combine chopped pecans, light brown sugar, white sugar, cinnamon, a pinch of salt, and melted butter to make the crumb filling and topping.
2. In another bowl, whisk together all-purpose flour, salt, baking powder, and baking soda.
3. In a large bowl, cream softened butter and white sugar together using a spatula.
4. Add eggs one at a time, whisking well after each addition until smooth and sticky.
5. Mix in vanilla extract and sour cream.
6. Gently whisk in the dry flour mixture until just combined, being careful not to overmix or lose flour.
7. Assemble the cake in a buttered baking dish by layering half the batter, half the crumb mixture, the remaining batter, and topping with the rest of the crumbs.
8. Bake in a preheated oven at 350 degrees F for about 35 minutes, or until a bamboo skewer inserted near the center comes out clean.
9. Let the cake cool completely before slicing and serving.
