Turkish Chicken Kebabs

Ingredients
0.5cup Greek yogurt, 2tbsp olive oil, 1lemon lemon juice, 1tbsp ketchup, 3cloves minced garlic, 1tsp kosher salt, 0.5tsp black pepper, 1tsp chili flakes, 1tsp paprika, 1tsp ground cumin, 0.25tsp cinnamon, 3lbs boneless skinless chicken thighs, 2pieces lavash bread
Instructions
1. In a bowl, combine Greek yogurt, olive oil, lemon juice, ketchup, minced garlic, kosher salt, black pepper, chili flakes, paprika, ground cumin, and cinnamon. Whisk until smooth.
2. Cut boneless skinless chicken thighs in half and add them to the marinade. Toss thoroughly to ensure every piece is coated.
3. Cover and marinate in the refrigerator for 2 to 8 hours.
4. Skewer the marinated chicken thighs onto metal skewers side-by-side to form a thick log of meat.
5. Place the skewers on a charcoal grill. Let cook without turning for at least 3 to 4 minutes to allow crustification before flipping.
6. Continue cooking and flipping until the chicken reaches an internal temperature of 155-160°F.
7. Transfer cooked kebabs onto lavash bread and serve with garnishes such as cucumber, cherry tomatoes, red onion, parsley, and yogurt sauce.
