Buttermilk Fried Chicken with Sweet Pickled Celery

1bunch celery, to taste water, 2tbsp sugar, 1tsp peppercorns, 1tsp mustard seeds, 3pieces cloves, 1pinch salt, 1cup white wine vinegar, 4pieces chicken drumsticks and thighs, 2cups buttermilk, 2cups flour, 1tsp smoked paprika, 1tsp cayenne pepper, 1tsp garlic powder, 2cm vegetable oil
Instructions
1. Pick the celery stalks and slice them diagonally into bite-sized pieces.
2. In a small pot, combine water, sugar, peppercorns, mustard seeds, cloves, salt, and white wine vinegar. Bring to a boil.
3. Place the sliced celery into a glass jar and pour the hot pickling liquid over it. Let it cool down.
4. Season the chicken pieces with salt and pepper, then pour buttermilk over them. Marinate in the fridge.
5. In a bowl, mix flour, salt, pepper, smoked paprika, cayenne pepper, and garlic powder.
6. Remove chicken from buttermilk, shake off excess, and coat thoroughly in the seasoned flour mixture.
7. Shallow fry the chicken in hot oil for 25 to 30 minutes, turning carefully until cooked through and golden brown.
