Air Fryer Egg Rolls

Ingredients
2ea green onions, 2cloves garlic, 1tbsp olive oil, 1pound ground pork, 3cups cole slaw mix, 1tsp grated ginger, 2tbsp soy sauce, 2tsp toasted sesame oil, pack egg roll wrappers
Instructions
1. Chop 2 green onions.
2. Crush and press 2 garlic cloves.
3. Heat 1 tbsp of olive oil in a skillet over medium-high heat, add 1 pound of ground pork, and cook while breaking it up with a wooden spoon for about 4 minutes until mostly browned.
4. Add 3 cups of cole slaw mix, chopped green onions, pressed garlic, and 1 tsp of grated ginger. Cook until tender, about 2 minutes.
5. Add 2 tbsp of soy sauce and 2 tsp of toasted sesame oil, mix well, and then remove the filling from heat and let it cool slightly.
6. Brush edges of an egg roll wrapper with water, add 2 to 3 tablespoons of filling diagonally, fold in the corners, roll up tightly, and place on a parchment-lined baking sheet.
7. Spray the tops of the egg rolls with oil and place them face down in the air fryer basket, leaving space between them. Spray the tops again.
8. Air fry at 350°F for 7 minutes first.
9. Flip the egg rolls, give them one more spray with oil, and air fry for about 5 more minutes until golden and crispy.
