Spanish Garlic Shrimp (Gambas al Ajillo)

1pound frozen shrimp, 4cloves garlic, 0.5cup extra virgin olive oil, 2tablespoons sherry wine, to taste kosher salt, 1spoon hot smoked Spanish paprika, bunch parsley
Instructions
1. Thaw and carefully drain one pound of shrimp, then peel them while keeping the last little piece of tail meat intact.
2. Transfer the cleaned shrimp into a mixing bowl and place them in the fridge.
3. Slice three or four cloves of garlic thinly across with a small sharp knife.
4. Season the shrimp with kosher salt and hot smoked Spanish paprika, then mix to coat.
5. Cook sliced garlic and extra virgin olive oil in a pan over medium heat until the garlic just barely starts to turn golden and softens.
6. Add the shrimp to the pan and turn the heat up to high. Cook for about two minutes, keeping them moving continually until they curl up.
7. Dump in the sherry wine and cook for another minute, stirring continually until the sauce comes up to a boil and the shrimp are cooked through.
8. Turn off the heat, toss in freshly chopped parsley, stir together, and serve.
