Restaurant Style Palak Dal Tadka

0.5cup Chana Dal, 0.25cup Moong Dal, 0.25cup Toor Dal, 0.25cup Masoor Dal, 0.5tsp Turmeric, 1.5tsp Salt, 2tbsp Oil, 5cup Water, 2tsp Cumin, pinch Hing, 5cloves Garlic, 1sliced Onion, 2tsp Chilli Powder, 1tsp Garam Masala, 1tsp Coriander Cumin Powder, 2chopped Tomato, 1bunch Palak, 2tbsp Ghee, 1tsp Kasuri Methi, 2pieces Dried Red Chilli
Instructions
1. Add chana dal, moong dal, toor dal, and masoor dal to a pressure cooker.
2. Add turmeric, salt, oil, and water, then pressure cook for 5 whistles.
3. In a pan, heat oil, add cumin, hing, crushed garlic, and sliced onion. Saute well.
4. Add turmeric, chilli powder, garam masala, and coriander cumin powder. Saute on low flame.
5. Add chopped tomatoes and salt. Saute until soft and mushy.
6. Add chopped palak and saute for 2 minutes until it shrinks.
7. Pour in the cooked dal, mix well, and add water to adjust consistency.
8. Cover and simmer for 5 minutes.
9. For tadka, heat ghee in a pan, add cumin, hing, kasuri methi, dried red chilli, and chilli powder.
10. Pour the tadka over the dal and mix well before serving.
