Croque Madame

2tbsp butter, 2tbsp flour, 1cup milk, pinch kosher salt, pinch black pepper, pinch nutmeg, 4slices rustic bread, 4slices ham, 1cup gruyere cheese, 2pieces eggs
Instructions
1. Melt equal parts butter and flour in a saucepan to make a roux, then slowly add milk until you get a nice thick béchamel.
2. Season the béchamel with kosher salt, freshly ground pepper, and freshly grated nutmeg. Set aside.
3. Cut nice thin slices of rustic bread and brush them with melted butter.
4. Toast the bread slices in a pan, pile high with ham, and sandwich them together. Toast well on both sides.
5. Open the sandwiches back up, add graded gruyere, close them back down, and pour béchamel over the top.
6. Place the sandwiches under the broiler for a few minutes until bubbly and golden.
7. In a separate pan, fry a couple of eggs.
8. Place the fried eggs over top of the broiled sandwiches and serve.
