Ingredients
250g minced pork and beef mix, 100g stale bread, pinch salt, pinch pepper, 1piece chili, 1clove garlic, 1bunch parsley, 3tbsp olive oil, 400g linguine, 50g Parmesan cheese, 50g wild rocket
Instructions
1. Soak the stale bread in water for about half an hour, then squeeze out the excess moisture.
2. In a bowl, combine the minced meat, soaked bread, salt, pepper, finely chopped chili, minced garlic, finely chopped parsley, and a couple of tablespoons of olive oil. Mix thoroughly with your hands.
3. Roll the meat mixture into small cherry tomato-sized meatballs using water on your palms to prevent sticking.
4. Place a plate over a pan of boiling water, drizzle with olive oil and a splash of water, arrange the meatballs on the plate, cover with another plate, and steam for 30 to 35 minutes.
5. Boil the linguine in salted water following packet instructions.
6. In a large frying pan, add the cooked meatballs, drained linguine, grated Parmesan cheese, chopped parsley, and a drizzle of olive oil. Toss and mix everything together over heat.
7. Serve on a warm plate, top with more grated Parmesan cheese, pepper, olive oil, and fresh wild rocket.
