1.66cups all-purpose flour, 0.25teaspoon baking soda, 1teaspoon baking powder, 1cup granulated sugar, 0.25teaspoon kosher salt, 3large egg whites, 0.5cup sour cream, 0.5cup milk, 3teaspoons vanilla extract, 0.75cup unsalted butter, 1pound unsalted butter for buttercream, 2pounds confectioners sugar, 2tablespoons heavy cream
Instructions
1. Sift all dry ingredients including all-purpose flour, baking soda, baking powder, granulated sugar, and kosher salt into a large bowl and whisk them together.
2. In another bowl, combine the egg whites, sour cream, warm milk, and vanilla extract. Whisk together, then mix in the softened unsalted butter.
3. Fold the dry ingredients into the wet ingredients mixture until just combined.
4. Line a muffin tin with cupcake papers and fill them evenly with batter using an ice cream scoop.
5. Bake at 350 degrees Fahrenheit for 15 to 20 minutes until the centers are set.
6. Make the buttercream by whipping the softened unsalted butter in a mixer until creamy and silky.
7. Sift in the confectioners sugar in batches, mixing on low speed until incorporated.
8. Add a little vanilla extract, a splash of cream or milk, and a pinch of salt. Beat until smooth and creamy.
9. Transfer the buttercream to a piping bag fitted with a large star tip and pipe onto the cooled cupcakes.
