1ea chicken thigh, 1ea jalapeno pickles, 1ea hamburger buns, 1cup self-rising flour, 1ea yogurt
Instructions
1. Pour pickle or jalapeno brine over the chicken thigh in a bowl to brine.
2. Whisk flour, black pepper, and a pinch of salt in a separate bowl.
3. Mix yogurt into the remaining brine liquid to create the wet batter mixture.
4. Add a little of the brine mixture to the flour mixture to create craggly bits for extra crispiness.
5. Heat oil in a wok or skillet to around 325°F.
6. Dredge the brined chicken thoroughly in the flour mixture.
7. Fry the chicken in the hot oil until crispy and cooked through, aiming for an internal temperature of 165°F.
8. Toast the hamburger bun.
9. Assemble the sandwich with toasted buns, pickles or pickled jalapenos, and the fried chicken.
