General Tso's Chicken

0.25cup white vinegar, 3tbsp soy sauce, 3tbsp sugar, 3.75cup cornstarch, 1.5cup water, 0.5cup hoisin sauce, lbs chicken thighs, 5tbsp vegetable oil, 4cloves garlic, 2tbsp ginger, tbsp red chili flakes, 3pieces egg whites, 0.5cup all-purpose flour, 0.5tsp baking soda
Instructions
1. Whisk together white vinegar, soy sauce, sugar, cornstarch, water, and hoisin sauce in a bowl to make the sauce and marinade.
2. Add 6 tablespoons of the marinade to a bag with the cut chicken thighs, remove air, seal, and marinate for 30 minutes.
3. Measure 2 cups of the remaining sauce into a measuring cup for cooking down later.
4. Heat a wok over medium heat, add 1 tablespoon vegetable oil, and cook minced garlic, grated ginger, and red chili flakes until fragrant.
5. Add 2 cups of marinade into the wok and whisk constantly until thickened and glossy, about 2 minutes.
6. Set the cooked sauce aside. Remove chicken from the fridge, pat dry with paper towels to remove excess marinade.
7. Prepare dredging stations with egg whites in one shallow bowl and a mixture of cornstarch, flour, remaining marinade, and baking soda in another shallow bowl.
8. Coat chicken pieces in egg whites, then press into the flour and cornstarch mixture.
9. Deep fry the battered chicken in batches in oil heated to 350F until golden brown and crispy.
10. Reheat the reserved sauce over medium-low heat, add the fried chicken, and toss together for less than a minute until coated without getting soggy.
