Chocolate and Cinnamon Babka

0.5cups milk, 1packet active dry yeast, 2.5ounces sugar, 18ounces flour, 1teaspoon kosher salt, 1pinch nutmeg, 4large eggs, 12tablespoons butter, 4.5ounces chocolate chips, 1teaspoon espresso powder, 0.33cups cocoa powder, 0.33cups confectioner's sugar, 0.5cups dark brown sugar, 2tablespoons ground cinnamon
Instructions
1. Heat milk to 110°F, add yeast and a pinch of sugar. Let sit for 10 minutes until foamy.
2. In a stand mixer, combine flour, sugar, salt, and grated nutmeg. Add the yeast mixture and beaten eggs, kneading until a dough forms.
3. Gradually incorporate butter in batches, kneading until smooth and supple, then rise in a buttered bowl for 1.5 hours.
4. Make chocolate filling by melting butter and chocolate chips with espresso powder, cocoa powder, and confectioner's sugar. Make cinnamon filling with brown sugar, cinnamon, and melted butter.
5. Punch down dough, roll into rectangles, spread fillings, roll up, freeze briefly, slice lengthwise, twist into logs, and place in loaf pans to rise again.
6. Bake at 375°F for 30 minutes, brush with simple syrup, and cool before serving.
