1cup All-purpose Flour, 1teaspoon Salt, 3to taste Large Eggs, 1.25cup Whole Milk, 0.25cup Beef Roast drippings, Lard, or Oil
Instructions
1. In a medium bowl, combine all-purpose flour and salt, then whisk well.
2. In a large bowl, crack the eggs.
3. Add whole milk to the eggs and whisk until smooth.
4. Gradually pour the milk and egg mixture into the flour mixture while whisking to create a smooth batter.
5. Chill the batter in the refrigerator while the oven preheats to 425 degrees Fahrenheit for 10 minutes.
6. Spoon 1 teaspoon of beef roast drippings, lard, or oil into each well of a muffin tin.
7. Place the muffin tin with fat into the oven at 425 degrees Fahrenheit for 10 minutes until screaming hot.
8. Quickly remove the hot muffin tin, give the chilled batter a stir, and spoon about a quarter cup of batter into each well.
9. Bake in the oven at 425 degrees Fahrenheit for 20 minutes until puffed and golden.
