Miso Honey Chicken

1big spoonful white miso, 2spoonful honey, 1splash rice vinegar, 1splash hot sauce, 1spoonful salt, 2pieces half chickens, 1pinch kosher salt
Instructions
1. Add a big spoonful of white miso to a mixing bowl.
2. Add honey, rice vinegar, hot sauce, and salt to the bowl, then whisk together.
3. Make three or four slashes into the leg and thigh of the chicken pieces with a knife.
4. Toss the chicken in the marinade until thoroughly coated and marinate in the fridge for 2 to 12 hours.
5. Remove the chicken from the fridge, flip over, and sprinkle generously with kosher salt on the skin side.
6. Cook the chicken covered over indirect heat on the grill, starting skin side up.
7. Flip the chicken every 15 to 20 minutes, brushing with reserved marinade, until the inside of the thigh reaches 160 to 165 degrees F.
