Mongolian Beef

500g beef, 1bottle beer, pinch salt, pinch black pepper, 2tbsp corn starch, 1.5unit egg, 2cup cooking oil, 1tbsp oyster sauce, 3tbsp soy sauce, 3tbsp brown sugar, 0.67cup water, 1tsp dark soy sauce, 1tbsp ginger, 1.5tbsp garlic, 1bunch spring onion
Instructions
1. Slice the beef into 5mm thick pieces.
2. Season the beef with Chinese cooking wine (or beer), salt, and black pepper. Let it sit for 30 minutes.
3. Coat the beef with corn starch and egg whites, then massage for 5 minutes.
4. Heat up frying oil to 375F and fry the beef in batches for 1 to 2 minutes until slightly golden.
5. Prepare the sauce by mixing corn starch, oyster sauce, soy sauce, brown sugar, water, and dark soy sauce.
6. Heat oil in a pan, sauté minced ginger, minced garlic, and white parts of spring onion until fragrant.
7. Pour in the sauce and stir until it thickens.
8. Add the fried beef back into the pan and mix well with the sauce.
9. Add green spring onion, give it a final toss, and serve with white rice.
