2ea tomatoes, 1ea onion, 1ea jalapeno, 1ea lime, 1bundle cilantro, 1clove garlic, to taste kosher salt, to taste freshly cracked pepper, 1ea red pepper, 1ea mango, 1ea scallion, splash red wine vinegar, pinch cumin
Instructions
1. Chop two tomatoes by cutting them in half, placing lateral cuts down the length, a single slice down the center, and chopping into pieces.
2. Chop an onion in half, peel the skin, and cut consistent-sized pieces using lateral slices and a center cut while leaving the root intact as a handle.
3. Core and deseed the optional jalapeno, then chop into pieces using a rocking motion. Wear gloves if needed.
4. Add a squeeze of lime and finely chopped cilantro by folding the leaves into a bundle and rocking the knife across.
5. Peel a clove of garlic by pounding it with a knife, then use a garlic press to add it to the bowl.
6. Season to taste with kosher salt and freshly cracked pepper, mixing thoroughly.
7. Optionally get creative by adding chopped red pepper, mango, scallion, red wine vinegar, and toasted cumin, then re-season with salt and pepper.
