Butter-Basted Fish Fillets with Garlic and Thyme

2fillets firm white fish fillets (cod, halibut, or haddock), to taste salt, to taste pepper, 1tablespoon oil, 3tablespoons butter, 5sprigs thyme, 2cloves garlic, 2wedges lemon wedges
Instructions
1. Pat the fish dry on all sides and season well with salt and pepper.
2. Heat a skillet over medium-high heat with oil, then place fish skin-side down (or the presentation side first).
3. Flip the fish carefully using two spatulas once the first side is golden brown.
4. Add butter to the pan, push the fish slightly forward, tilt the skillet, and baste for 15 seconds, then let sear for 30 seconds, repeating until fish hits 130 degrees.
5. Add thyme and garlic to the pan, continue basting and resting until the fish reaches 140 degrees.
6. Remove the fish from the pan, serve the browned butter sauce over it, and garnish with lemon wedges.
