Arepas con Queso

10ounces Masarepa (pre-cooked corn flour), 10ounces Warm water, 1teaspoon Kosher salt, 1ounce Unsalted butter, 5ounces Oaxaca or low moisture mozzarella cheese
Instructions
1. Combine warm water, kosher salt, and masarepa in a large bowl, mixing constantly with hands until a smooth pastry forms.
2. Let the dough rest for 10 minutes to hydrate.
3. Add soft unsalted butter and shredded cheese to the dough, kneading for 5 minutes until a cohesive ball forms.
4. Divide the dough into 8 equal pieces and form into patties.
5. Cook the arepas in a preheated cast iron skillet with butter over medium-low heat for 5 to 7 minutes per side until golden brown.
6. Slice the arepas two-thirds of the way open, stuff with additional cheese, and return to the skillet for 2 to 3 minutes per side until melted.
