Tunnock's Teacake Inspired Chocolate Dome Dessert

250g dark chocolate, 1part butter, 2parts brown sugar, 1part treacle, 3parts flour, 1pinch ginger, 1part plum, 1part sugar, 1dash grenadine, 50ml sloe gin, 2leaves gelatin
Instructions
1. Mix butter, brown sugar, treacle, flour, and ginger to form a dry, crumbly biscuit dough. Roll out between greaseproof paper and freeze to set.
2. Make plum jam by boiling equal ratios of plum and sugar to about 120 degrees Celsius, adding a dash of grenadine for color.
3. Prepare the sloe gin marshmallow by boiling sugar syrup to 118 degrees Celsius, dissolving gelatin with sloe gin, and whipping into egg whites.
4. Temper dark chocolate by melting above 45 degrees Celsius, chilling down to 26 degrees Celsius, and reheating back to 32 degrees Celsius.
5. Layer the marshmallow, jam, and biscuit inside the tempered chocolate domes and encase fully.
