2pieces dried ancho chiles, 2teaspoons cumin, 2teaspoons ground coriander seed, 2teaspoons paprika, 2pieces canned chipotles in adobo sauce, 1lb chuck beef, 2pieces onion, 3cloves garlic, 2cans tomatoes, 1pinch dried oregano, 1sprig basil, 1lb ziti pasta, 3tablespoons butter, 3tablespoons flour, 3cups whole milk, 1pinch dried mustard, 1dashes hot sauce, 1lb yellow cheddar, 5ounces Parmesan, 2cups mozzarella, 1loaf French bread
Instructions
1. Soak dried ancho chiles in boiling water for 10 minutes.
2. Blend soaked chiles with cumin, ground coriander seed, paprika, and canned chipotles in adobo sauce to make chili paste.
3. Brown ground chuck beef, then saute onions, garlic, tomatoes, and the chili paste in the beef fat. Simmer for at least 45 minutes and season.
4. Mince small onion, saute until soft, add crushed garlic, and then 50/50 mix of diced and pureed tomatoes, dried oregano, and a sprig of basil. Simmer for 45 minutes to an hour.
5. Cook ziti pasta, drain, and set aside.
6. Make a roux with equal parts butter and flour, slowly stream in whole milk while whisking until a thick sauce forms.
7. Add dried mustard, hot sauce, grated yellow cheddar, and Parmesan. Mix in the cooked pasta until evenly coated.
8. Prepare French bread pizza by layering mozzarella, red sauce, another layer of mozzarella, and Parmesan. Bake in a 425° Fahrenheit oven.
9. Combine chili and mac & cheese to form chili-mac, top the French bread pizza with it, close it up like a sandwich, and cut in half.
