Thick-Cut Oven Fries

to taste Baking spray, 3tablespoons Vegetable oil, 2pounds Yukon Gold potatoes, 3tablespoons Cornstarch, 0.75cup Water, 0.5teaspoon Table salt
Instructions
1. Spray a rimmed baking sheet generously with baking spray, then add vegetable oil and tilt to distribute evenly.
2. Cut Yukon Gold potatoes in half lengthwise, trim a tiny sliver off the long sides, and cut into even thick planks.
3. Whisk cornstarch and water together in a bowl, then microwave to make a pudding-like slurry, stirring every 20 seconds.
4. Toss the potato planks in the cornstarch slurry until lightly coated.
5. Arrange the potatoes on the prepared baking sheet with space between each plank.
6. Cover the baking sheet with greased aluminum foil and bake on the lowest rack of a 425 degree oven for 12 minutes.
7. Remove the foil and bake until the first side is browned, taking 10 to 18 minutes.
8. Flip the fries over and bake for another 10 to 18 minutes on the lowest rack until golden and crispy.
9. Season the hot fries immediately with table salt and toss to coat.
