1.5cups buttermilk, 0.5cups milk, 4teaspoons dry yeast, 2.5tablespoons sugar, 22ounces bread flour, 0.5teaspoon baking soda, 0.5teaspoon kosher salt, 2quarts vegetable oil, to taste powdered sugar
Instructions
1. Combine buttermilk and boiling milk to create a tepid mixture. Add dry yeast and sugar, mix well, and set aside for 10 minutes to bloom.
2. In a separate bowl, mix bread flour, baking soda, and kosher salt.
3. Add the wet mixture to the dry ingredients and mix with a dough hook for about 3-4 minutes until a sticky dough forms.
4. Cover the dough and let it rest for one hour until it doubles in size.
5. Turn the dough out onto a heavily floured work surface, roll it out to about a quarter-inch thickness, trim the edges, and cut into uniform rectangles.
6. Fry the dough rectangles in vegetable oil heated to 370 degrees Fahrenheit, cooking for about the same amount of time on each side until golden brown and puffed.
7. Drain on paper towels and dust liberally with powdered sugar before serving.
