Creamy Chili Sesame Noodles

0.25cup tahini, 3tbsp creamy peanut butter, 2.5tbsp soy sauce, 1tbsp white distilled vinegar, 1tbsp light brown sugar, 1tsp mirin, 3cloves garlic, 1.5in ginger, 1tbsp shiradashi, 1tbsp chili crisp, 1lb fresh lo mein noodles
Instructions
1. In a bowl, combine tahini, creamy peanut butter, soy sauce, white distilled vinegar, light brown sugar, mirin, grated garlic, grated ginger, shiradashi, and chili crisp.
2. Whisk the sauce ingredients together until fully incorporated and smooth.
3. Boil 1 pound of fresh lo mein noodles in boiling water according to package directions.
4. Drain the noodles.
5. Add half of the hot noodle water to the peanut sauce and whisk to achieve an Alfredo-like consistency.
6. Add the cooked noodles into the sauce and toss thoroughly to coat.
7. Prepare garnish by cutting green onions at a steep angle into fine curls, and optionally plunging into ice water.
8. Plate the noodles and top with a drizzle of spicy chili crunch, thinly sliced green onions, and crushed peanuts.
