Chocolate Mousse

200g dark chocolate, pinch salt, 1knob butter, 300ml double cream, 1tsp vanilla paste, 2tbsp sugar, 2large eggs
Instructions
1. Set up a pan with a little water on medium heat and place a glass bowl on top to melt the chocolate.
2. Break up the dark chocolate into the bowl, add a tiny pinch of salt and a knob of butter, and let it melt.
3. In a separate bowl, pour double cream, add vanilla paste and sugar, then whisk until it thickens.
4. Crack the eggs, separate the yolks from the whites, and whisk the egg yolks into the cream mixture.
5. Remove the melted chocolate from the heat and allow it to cool.
6. Whisk the egg whites in another bowl until stiff peaks form.
7. Pour the melted chocolate into the cream mixture and whisk together.
8. Add a capful of your favorite booze if desired, then gently fold in the whipped egg whites.
9. Transfer the mousse to the fridge to set, then dust with cocoa powder and serve.
