Stuffed Pork Chops

3slices bacon, 0.5to taste onion, 1to taste jalapeno pepper, 1to taste peach, 1tsp fresh thyme, pinch salt, pinch black pepper, 1tsp sugar, 4to taste crackers, 0.25cup chicken broth, 2to taste thick-cut pork chops, 1tbsp butter
Instructions
1. Chop and cook bacon in a pan over medium heat until crisp, then render fat.
2. Add diced onions and jalapenos to the pan with the bacon and sauté.
3. Peel and dice the fresh peach, add to the pan, and sauté until tender.
4. Transfer the mixture to a bowl, add fresh thyme, salt, pepper, sugar, crushed crackers, and chicken broth, then mix well and chill in fridge.
5. Cut a deep pocket into the side of each thick-cut pork chop using a sharp knife.
6. Stuff the pork chop pockets with the chilled peach and bacon filling.
7. Season the outside of the stuffed pork chops with salt and pepper.
8. Sear the stuffed pork chops in a hot skillet with high heat until browned on both sides.
9. Transfer to an oven and bake at 400 degrees F for 15 minutes or until internal temperature reaches 145 F.
10. Make pan sauce with chicken broth and drippings, finish with butter off the heat, and serve over pork chops.
