Shrimp and Pork Fried Wonton

8ounces ground pork, 8ounces peeled shrimp, 1tbsp corn starch, 1tbsp soy sauce, 1tbsp oyster sauce, 1.5tsp ground ginger, 1tsp ground garlic, 1tsp white pepper, 1tsp sugar, 1tsp salt, 1to taste egg, 0.25cup spring onion, 0.25cup cilantro, 0.33cup carrot, 1package wonton skin, 1tsp Chinese black vinegar, 2tsp Sichuan hot chili oil
Instructions
1. Put ground pork and half of the peeled shrimp into a blender.
2. Add corn starch, soy sauce, oyster sauce, ground ginger, ground garlic, white pepper, sugar, salt, and egg into the blender, then blend together.
3. Transfer the mixture into a big bowl and mix in spring onion, cilantro, and finely minced carrot.
4. Make a slurry with flour and water to use as glue. Put filling and a piece of shrimp on the wonton skin, add slurry on the edge, fold like a triangle, push out the air, and seal tightly.
5. Test the oil temperature with a tiny piece of wonton skin, then deep fry the wontons until they float to the top and feel crispy, then remove them.
6. Let the wontons rest for about 5 minutes, then double fry them for about 15 seconds until golden brown and super crispy.
7. Mix soy sauce, Chinese black vinegar, and Sichuan hot chili oil together to make the dipping sauce.
