0.66lbs chuck roast, 0.33lbs brisket, 0.33lbs short ribs, 1bunch kale, 1tsp garlic powder, 1tsp kosher salt, 0.25cup olive oil, 1piece burger bun, 1oz gruyere cheese
Instructions
1. Trim and cut chuck roast, brisket, and short ribs into 1-inch cubes. Chill in the freezer for 15-20 minutes until firm.
2. Grind each type of beef separately in a meat grinder, then gently mix them together in a 2:1:1 ratio without overworking.
3. Weigh and shape the beef mixture into third-pound patties with slight walls around the edges to prevent puffing.
4. Wash and dry kale, remove stems, and toss with garlic powder, kosher salt, and olive oil.
5. Spread kale on a rimmed baking sheet and bake at 325 degrees Fahrenheit for 15-20 minutes, flipping halfway through.
6. Toast the burger bun in a hot skillet with a little oil.
7. Cook the beef patty in a smoking hot cast iron skillet, season with kosher salt, flip, top with gruyere cheese, squirt a little water, and cover with a lid to melt.
8. Assemble the burger on the toasted bun with a large pile of crispy kale chips.
