Crispy French Toast

6slices thick sliced bread, 2large eggs, 0.5cups cream, 2teaspoons sugar, 1pinch salt, 1splash vanilla, 1pinch cinnamon, 113g clarified butter, 1cups panko breadcrumbs
Instructions
1. Place thick slices of bread straight onto the oven bars and heat at a low temperature around 350 Fahrenheit (180C) to dry out the bread without heavily browning it.
2. Make clarified butter by melting a stick of butter on low heat for about 10 minutes until it boils, fizzes, and the milk solids turn golden.
3. Whisk together eggs, cream, sugar, a pinch of salt, a splash of vanilla, and cinnamon until the custard is completely smooth.
4. Grind down the panko breadcrumbs slightly with your hands to get a fine, crisp coating.
5. Dip the dried bread quickly or soak it longer in the custard depending on preference, then coat the outside with the panko crumbs.
6. Heat a thin film of clarified butter in a non-stick pan over medium-low heat and fry the bread until golden and crispy on both sides.
7. If you let the bread soak deeply in custard, finish cooking the inside by placing the French toast in the oven for about seven minutes.
