Rum French Toast

1packet dry active yeast, 0.33cup warm whole milk, 3.5cup flour, 8large eggs, 0.33cup sugar, 2teaspoon kosher salt, 1.5stick unsalted butter, 1cup heavy cream, 0.25teaspoon nutmeg, 0.25teaspoon cinnamon, 0.25teaspoon vanilla extract, 0.5cup dark rum, 0.5cup maple syrup, 1tablespoon canola oil
Instructions
1. Dissolve a packet of yeast and 1/3 cup of warm whole milk, add 1 cup of flour and 1 egg. Mix to form a shaggy ball sponge, cover with flour, and rest for 30 to 45 minutes.
2. Add 1/3 cup sugar, 2 teaspoons kosher salt, and 4 lightly beaten eggs. Stir, add another cup of flour, and knead by hand.
3. Add a final 1/2 cup of flour and knead for 10 minutes until smooth and silky.
4. Divide dough in half, flatten one half, and fill with a stick and a half of soft, unsalted butter. Roll and knead until incorporated, then incorporate the other half of the dough and knead for another 10 minutes.
5. Place dough in a buttered bowl, cover in plastic wrap, and let rise in a warm place for two hours until doubled.
6. Deflate dough, cover in plastic wrap, and refrigerate 4 to 6 hours or overnight.
7. Shape dough into a bubble top brioche by dividing into 18 evenly sized balls and placing in a buttered loaf pan. Let rise in a warm place for 2 to 3 hours.
8. Brush with beaten egg and bake at 375 F for 30 to 40 minutes until internal temperature reaches 200 F.
9. Simulate the staling process by placing the brioche in a 200 F oven for 30 to 40 minutes.
10. Make custard by combining 3 eggs, 1/2 cup heavy cream, pinch of salt, 1/4 teaspoon nutmeg, 1/4 teaspoon cinnamon, 1/4 teaspoon vanilla, sugar, and a splash of dark rum.
11. Soak toasted bread in custard for 30 seconds to a minute on each side, then cook in a heavy-bottomed skillet with butter and canola oil over foaming heat.
12. Make rum whipped cream by whipping heavy cream, sugar, vanilla, and dark rum to soft peaks.
13. Make rum maple syrup by simmering maple syrup, butter, and dark rum until syrupy, then mix in a bit of heavy cream.
