Lemon Bars

2.75cups all-purpose flour, 0.5tsp salt, 2.33cups confectioner's sugar, 12tbsp unsalted butter, 3pieces lemons (for zest and juice), 3cups granulated sugar, 8pieces large eggs
Instructions
1. Preheat your oven to 350 degrees Fahrenheit and line a 9x13 baking dish with parchment paper.
2. In a stand mixer bowl, combine all-purpose flour, salt, and confectioner's sugar, then whisk them up.
3. Add melted unsalted butter to the flour mixture and mix on low until it forms a crumbly shortbread mixture.
4. Dump the crumbly shortbread mixture into the prepared 9x13 pan and press it down evenly using your hands.
5. Bake the crust in the oven at 350 degrees Fahrenheit for about 20 minutes until ever so slightly golden.
6. Process granulated sugar and lemon zest together in a food processor until the sugar turns a pastel lemon color.
7. Juice the lemons to get one cup of fresh lemon juice.
8. In a big bowl, combine the lemon sugar, flour, eggs, and fresh lemon juice, then whisk until completely smooth and homogenous.
9. Pour the lemon filling over the warm shortbread crust.
10. Bake at 350 degrees Fahrenheit for about 25 minutes until the edges are set and the inside is slightly jiggly.
11. Chill the lemon bars in the fridge, lift out using the parchment paper, dust with confectioner's sugar, and slice into bars.
