Pan-fried Fish Cakes

170g fish, 200g shrimp, 35.4g dried scallop, 17g cilantro, 15g green onion, 1ea egg, 1tsp chicken bouillon powder, 2tsp salt, 0.5tsp sugar, 0.25tsp white pepper, 3tbsp cornstarch, 1tsp sesame oil
Instructions
1. Peel and devein the shrimp, then rinse and squeeze out excess water.
2. Slice your fish into 1/4 inch pieces and roughly chop, then mash using a slap-and-pull motion.
3. Mince the rehydrated dried scallops and mix with the fish and shrimp paste.
4. Dice up the cilantro and green onions, and prepare the marinade with sugar, salt, chicken bouillon powder, white pepper, and cornstarch.
5. Combine the marinade, water, egg, and aromatics with the seafood paste, and mix thoroughly in one direction until glue-like.
6. Form roughly 2 oz balls of fish paste, place into a greased pan, and press them flat to pan-fry on medium-high heat until golden brown on both sides.
