Sirloin Steak

1piece sirloin steak, 1drizzle olive oil, 1pinch salt, 1pinch black pepper, 0.5piece lemon
Instructions
1. Take the steak out of the fridge 20 minutes to half an hour before cooking to let it come up to room temperature.
2. Put your steak on a plate, drizzle with olive oil, and sprinkle with salt and black pepper.
3. Turn the steak over and repeat the seasoning process, rubbing and pushing the seasoning into the meat.
4. Heat a heavy-bottomed pan and lay the steak in the pan without adding extra oil.
5. Cook the steak, turning it every couple of minutes for about 8 minutes total for medium, making sure it stays in good contact with the pan.
6. Lift the steak and sear it on the fat side to get the fat crispy.
7. Lift the steak out of the pan and pop it on a plate to rest.
8. While the steak is resting, give it a little squeeze of lemon and a drizzle of good olive oil, then let it rest for a couple more minutes before eating.
