Wonton Soup (Geiao Nam)

3cloves garlic, 1teaspoon white peppercorns, 2tablespoons cilantro stems, 200g ground pork, 150g shrimp, 1piece egg, 1tablespoon soy sauce, 1tablespoon oyster sauce, 1teaspoon sugar, 1tablespoon tapioca starch, 1package wonton wrappers, 500ml pork stock, 1pinch salt, 1teaspoon fish sauce, 1pinch white pepper, 1head baby bok choy
Instructions
1. Make an herb paste by pounding or blending garlic, white peppercorns, and cilantro stems together.
2. In a food processor, combine ground pork, shrimp, egg, soy sauce, oyster sauce, herb paste, sugar, and tapioca starch. Pulse until well combined but not completely pureed.
3. Place about a teaspoon of filling in the center of a wonton wrapper, gather the edges, and squeeze to seal without using water.
4. Prepare the broth by combining pork stock, soy sauce, salt, fish sauce, sugar, and white pepper in a pot and heating it up.
5. Boil the baby bok choy briefly in a separate pot of water, then remove and place into serving bowls.
6. Cook the wontons in boiling water for about 1 to 1.5 minutes until they float and are cooked through, then shake off excess water and add them to the serving bowls.
7. Ladle the hot broth over the wontons and greens, and top with fried garlic, chili oil, and chopped green onions.
