Honey Walnut Shrimp

10oz shrimp, 3oz walnuts, 0.25tsp salt, 4tbsp mayonnaise, 3tbsp sweetened condensed milk, 2tsp lemon juice, 4tbsp all-purpose flour, 2tbsp cornstarch, 2tsp baking powder, 0.5to taste egg, 7tbsp water, 2tsp corn oil, 3tbsp white granulated sugar, 0.5tsp sesame seeds
Instructions
1. Cut each peeled and deveined shrimp through the middle lengthwise to help it curl nicely when fried.
2. Marinate the shrimp with 1/4 tsp salt and mix well.
3. Make the sauce by mixing 4 tbsp mayonnaise, 3 tbsp sweetened condensed milk, and 2 tsp lemon juice in a bowl.
4. Make the batter by combining 4 tbsp all-purpose flour, 2 tbsp cornstarch, 2 tsp baking powder, half a beaten egg, 6-7 tbsp water, and 2 tsp corn oil. Mix until smooth.
5. Make sugar syrup by mixing 3 tbsp white sugar and 2 tbsp water in a bowl. Microwave for 60 seconds first, then twice for 30 seconds, stirring between each round.
6. Pour oil into a pan and heat to around 300F to fry the walnuts twice (first for 3-4 mins, then coat with syrup and fry for another 2 mins).
7. Clean the pan or use a second pan, add enough oil for deep frying, and heat to 350F.
8. Mix the shrimp into the batter to coat evenly, then drop them into the hot oil one by one. Fry for 2-3 minutes, then remove.
9. Reheat the oil to around 400F for the second fry of the shrimp, frying for about 60-90 seconds until extra crispy.
10. Mix the fried shrimp with the prepared sauce, plate over sliced oranges, and garnish with sesame seeds and fried walnuts.
