Seafood Soup (Caldo de Mariscos / Seafood Soup)

handful shrimp shells, 1bunch cilantro, 2tbsp vegetable oil, 1small onion, cloves garlic, 0.5cup dry white wine, 4cups seafood stock, 0.5lb cod, 0.5lb shrimp, 0.5lb sea scallops, 0.5lb squid, 0.5lb mussels, 0.5lb manila clams, pinch salt, pinch pepper
Instructions
1. Make a shellfish stock from shrimp shells and a ton of cilantro. Strain the stock and clean the pot.
2. Heat 2 tablespoons of vegetable oil in the pot, add chopped onion and sliced garlic, and sauté for a minute.
3. Deglaze with dry white wine and seafood stock. Add water if necessary.
4. Gently add cod, shrimp, sea scallops, squid, mussels, and manila clams to the pot.
5. Cover with a lid and cook for 5 to 8 minutes until the clams and mussels have opened. Discard any that haven't opened.
6. Season liberally with salt and freshly ground pepper to taste. Ladle generous portions into bowls and garnish with chopped cilantro.
