15g cake yeast, 10g salt, 300ml water, 100g pepperoni, 300g Wisconsin brick cheese, 400g canned tomatoes, 15ml olive oil
Instructions
1. Mix yeast, salt, and water with flour to make a wet dough (60 to 70% hydration) without sugar, oil, or dough conditioners.
2. Let the dough undergo initial fermentation, then keep it in covered holding pans to proof.
3. Do an initial stretch of the dough in a lightly oiled blue steel pan, let it rest to relax gluten, then give it a second stretch into the corners.
4. Layer pepperoni on the bottom, followed by a solid layer of Wisconsin brick cheese.
5. Spoon tomato sauce in three racing stripes across the top of the cheese without completely covering it.
6. Bake in an extremely hot oven at about 600°F (315°C) for about 13 minutes until the edges are caramelized and crispy.
