0.5pound tamarind pulp block, 2cups hot water
Instructions
1. Break the tamarind block into small chunks to increase surface area and make it dissolve faster in water.
2. Place the tamarind chunks into a large bowl and add hot water.
3. Let the mixture sit for about 30 minutes until it is cool enough to handle.
4. Transfer the mixture to a larger bowl if needed, then massage the flesh off the fibers and seeds with your hands.
5. Strain the mixture through a coarse sieve into a pot, pressing the pulp and scraping the fibers to extract as much paste as possible.
6. Rinse the remaining fibers in the sieve with a little extra water to get every last bit of paste.
7. Bring the extracted tamarind paste to a boil while stirring constantly to prevent it from splattering.
8. Pour the hot tamarind paste into mason jars or well-sealing containers and close tightly.
