Chocolate Chip Cookie Ice Cream Sandwiches

4oz butter, 1cup sugar, 1glug molasses, 1splash vanilla, 1tsp kosher salt, 1item egg, 6oz mixed white and dark chocolate chips, 1tsp baking powder, 2cup all-purpose flour, 2pint ice cream
Instructions
1. Melt a stick of butter in a large bowl, then add sugar, a glug of molasses, a big splash of vanilla, and a teaspoon of kosher salt.
2. Crack in one egg and beat the mixture smooth until you get nice ribbons.
3. Chop the mixed white and dark chocolate chips into smaller chunks.
4. Add a teaspoon of baking powder and flour to the wet mixture, starting with one cup and mixing, then adding a little more flour until the dough is wet and sticky.
5. Fold in the chopped chocolate chunks and mix into the dough.
6. Drop the sticky dough in dollops onto a parchment-lined baking sheet and spread it as thin as possible with a spatula.
7. Bake in the oven at 375 degrees Fahrenheit (135 C) for about 5 minutes, keeping it slightly underbaked.
8. Lift the hot, pliable cookie sheet out of the pan, let it cool, and cut it in half to create top and bottom sheets.
9. Drop scoops of alternating chocolate and vanilla ice cream onto the bottom cookie sheet.
10. Carefully invert the top cookie sheet over the ice cream, gently press down to compress, and place the whole sheet in the freezer until firm.
11. Once frozen solid, cut the sheet into individual ice cream sandwich squares and wrap them in parchment paper.
