Millionaire's Shortbread

1.5cups Unsalted butter, 0.5cup Granulated Sugar, 1to taste Egg Yolk, 1tsp Salt, 2tsp Vanilla Extract, 2cups All-Purpose Flour, 1cup Light Brown Sugar, 14oz Sweetened Condensed Milk, 0.25cup Corn Syrup, 1.5cups Semi-Sweet Chocolate Chips, 0.33cup Heavy Cream, 1pinch Sea Salt
Instructions
1. Preheat the oven to 350°F and line a 9x9 inch baking pan with parchment paper.
2. Cream 1 cup of room temperature unsalted butter in a bowl using a hand mixer.
3. Add 1/2 cup granulated sugar and mix well.
4. Add 1 egg yolk, 1/2 tsp salt, and 1 tsp vanilla extract, then mix.
5. Add 2 cups all-purpose flour gradually, mixing and then combining with a spatula to form the shortbread dough.
6. Press the shortbread dough into an even layer in the prepared 9x9 inch pan.
7. Bake the shortbread base at 350°F for about 22 minutes until the edges are golden.
8. In a saucepan, combine 1/2 cup unsalted butter, 1 cup light brown sugar, 1/2 tsp salt, 14 oz sweetened condensed milk, and 1/4 cup corn syrup.
9. Cook and whisk over medium heat until the caramel reaches 225°F.
10. Remove from heat, whisk in 1 tsp vanilla extract, and carefully pour the caramel over the baked shortbread base.
11. Refrigerate the pan for about 10 minutes until the caramel layer is set and firm.
12. In a bowl, combine 1 1/2 cups semi-sweet chocolate chips and 1/3 cup heavy cream. Microwave in bursts until mostly melted, then stir until smooth.
13. Pour the melted chocolate over the set caramel layer, smoothing it out and creating a wave pattern with an offset spatula.
14. Sprinkle a pinch of sea salt flakes over the chocolate.
15. Chill until fully set, then slice into squares and serve.
