Dum Aloo (Pressure Cooker Dum Aloo)

5ea Potato, to taste Oil, to taste Bay leaves, to taste Cumin seeds, 0.5tsp Sugar, 2ea Onion, 1tsp Ginger garlic paste, 0.5tsp Turmeric powder, 1tsp Red chilli powder, 0.5tsp Coriander powder, 0.5tsp Cumin powder, 0.5tsp Garam masala powder, 2ea Tomato, 1tbsp Schezwan chutney, 0.5cup Water, to taste Coriander leaves
Instructions
1. Turn on the flame, heat a cooker and add oil. Fry the potato pieces (cut in halves) on medium flame for 3-4 mins, stirring in between, then take them out.
2. Add a little oil in the same pan, then add bay leaves and cumin seeds. Fry for a few seconds.
3. Add little sugar, then add chopped onion slices and fry for 2-3 minutes on medium flame.
4. Add ginger garlic paste and cook for another 30 seconds.
5. Reduce flame to low and add turmeric powder, red chilli powder, coriander powder, cumin powder, black pepper powder, and garam masala powder. Fry the spices.
6. Add sliced tomatoes and salt. Increase flame to medium, cover, and cook for 3-4 minutes until tomatoes turn soft, then mash with a spatula.
7. Add fried potatoes and schezwan chutney, mix well, and pour in 1/2 cup of water.
8. Close the lid of the pressure cooker and cook for 2 whistles on low-medium flame. Let it cool down completely before opening.
9. Garnish with coriander leaves and serve.
