Fall-over biscuits

1cup all-purpose flour, 0.5stick butter, 0.5cup buttermilk, 1teaspoon sugar, 1teaspoon baking powder, 0.5teaspoon salt
Instructions
1. Get the oven real hot to 450 or 475 Fahrenheit to generate steam for puffiness.
2. Combine flour, sugar, salt, baking powder and cold butter in a bowl. Cut the butter into the dry ingredients until you have small, cold chunks of butter coated in flour.
3. Add most of the buttermilk, keeping a little bit behind for later. Mix with a spoon until the dough feels pretty wet.
4. Knead the dough barely just until it comes together into a ball.
5. Turn the dough onto a floured cutting board, flatten it out into a rectangle, and perform folds (aiming for seven folds total) with a light dusting of flour between layers.
6. Chill the dough in the freezer for about 10 minutes.
7. Cut the dough into narrow triangles using a sawing motion with a knife.
8. Bake in the very hot oven for 15 minutes without using the convection fan.
